- 2 large tortillas whole wheat, flour, or corn
- 4 large eggs
- ½ cup milk regular or plant-based
- 1 cup shredded cheese cheddar, mozzarella, or choice
- ½ cup diced vegetables bell peppers, spinach, onions, tomatoes
- 1 tsp olive oil or butter for greasing
- Salt pepper, and optional seasonings (paprika, garlic powder, chili flakes)
Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
Layer the tortillas in the dish, letting the edges rise slightly.
Whisk eggs, milk, salt, and seasonings in a bowl.
Sprinkle half the cheese over the tortillas, followed by vegetables.
Pour the egg mixture evenly over the layers.
Bake for 20-25 minutes until eggs are set and edges are golden.
Sprinkle remaining cheese on top and bake for another 5 minutes until melted.
Let it rest for 5 minutes before slicing and serving.
