This Powerful Tortilla Egg Bake is a hearty, protein-packed breakfast that combines soft tortillas, fluffy eggs, melty cheese, and fresh vegetables, all baked to perfection. It’s quick, easy, and perfect for a nutritious morning meal or a weekend brunch.

Ingredients
  

  • 2 large tortillas whole wheat, flour, or corn
  • 4 large eggs
  • ½ cup milk regular or plant-based
  • 1 cup shredded cheese cheddar, mozzarella, or choice
  • ½ cup diced vegetables bell peppers, spinach, onions, tomatoes
  • 1 tsp olive oil or butter for greasing
  • Salt pepper, and optional seasonings (paprika, garlic powder, chili flakes)

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Layer the tortillas in the dish, letting the edges rise slightly.
  • Whisk eggs, milk, salt, and seasonings in a bowl.
  • Sprinkle half the cheese over the tortillas, followed by vegetables.
  • Pour the egg mixture evenly over the layers.
  • Bake for 20-25 minutes until eggs are set and edges are golden.
  • Sprinkle remaining cheese on top and bake for another 5 minutes until melted.
  • Let it rest for 5 minutes before slicing and serving.

Notes

  • For a crispy tortilla base, – Pre-bake tortillas for 5 minutes before adding eggs.
  • To avoid sogginess, sauté watery veggies (like mushrooms or tomatoes) before adding them.
  • Customize flavors: Try different cheeses, proteins (ham, bacon, beans), or spice blends.
