These sheet pan eggs with cottage cheese are the perfect make-ahead breakfast, combining creamy eggs with a Mediterranean twist from Italian herbs and cottage cheese. Ideal for meal prep or weekend brunches!

Ingredients
  

Egg Mixture

  • 12 eggs
  • 1/2 cup milk
  • 1/2 cup cottage cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/4 tsp garlic powder

Optional Toppings

  • 1 cup finely chopped vegetables (optional)
  • 1 cup crumbled feta cheese (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Spray a 9.5×13” sheet pan, line with parchment paper, and spray again.
  • Whisk eggs, milk, cottage cheese, salt, pepper, Italian seasoning, and garlic powder in a mixing bowl until smooth.
  • Pour mixture into prepared sheet pan. Spread cottage cheese curds if clumped.
  • Add vegetables and feta cheese on top (if using).
  • Bake for 16-19 minutes or until eggs are fully set.
  • Cool slightly and cut into 12 slices.
