Ingredients

Proteins

  • 2 medium-sized chicken breasts or thighs diced
  • 1 lb shrimp peeled and deveined

Vegetables

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion diced
  • 3-4 cloves garlic minced

Pasta

  • 12 oz fettuccine or penne pasta

Seasonings

  • 2-3 tbsp Cajun seasoning
  • 1 tsp paprika
  • cayenne pepper optional, for extra heat
  • salt and black pepper to taste

Dairy

  • 1 1/2 cups heavy cream
  • 1/2 cup Parmesan cheese grated

Additional

  • 2 tbsp olive oil or butter for sautéing
  • 1/2 cup chicken broth
  • fresh parsley for garnish

Instructions

  • Pat the chicken pieces and shrimp dry with paper towels. Season each separately with Cajun seasoning, salt, and black pepper.
  • Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add the seasoned chicken and cook for 5-7 minutes until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add another tablespoon of oil or butter. Cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water and drain the rest.
  • In the same skillet, sauté the diced onion and bell peppers until softened (about 3-4 minutes). Add minced garlic and cook for another minute.
  • Stir in the chicken broth, scraping the bottom of the pan to deglaze. Lower the heat and pour in the heavy cream.
  • Add Parmesan cheese and adjust seasoning with Cajun spices, paprika, and cayenne (if desired). Simmer for 3-5 minutes until the sauce thickens.
  • Add the cooked chicken, shrimp, and pasta to the skillet. Toss everything together, ensuring the sauce coats evenly. Use reserved pasta water to adjust consistency if needed.
  • Garnish with fresh parsley and serve hot.

Notes

For extra spice, increase the Cajun seasoning or add chili flakes. Serve with garlic bread or a side salad for a complete meal.
