  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 cup fresh pineapple chunks (or canned in juice, drained)

Instructions

  • Marinate the Chicken:
  • In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  • Add the chicken and let it marinate for at least 30 minutes (or up to 2 hours).
  • Prepare the pineapple:
  • If using fresh pineapple, cut it into bite-sized chunks.
  • If using canned pineapple, drain the juice to avoid excess liquid.
  • Cook the Chicken & Pineapple (Choose a Method):
  • Grilling Method:
  • Preheat grill to medium heat.
  • Grill chicken for 5-6 minutes per side, brushing with marinade.
  • Grill pineapple separately until caramelized.
  • Baking Method:
  • Preheat oven to 375°F (190°C).
  • Place marinated chicken in a baking dish and bake for 25-30 minutes.
  • Add pineapple chunks in the last 10 minutes of baking.
  • Stir-Frying Method:
  • Heat a pan over medium-high heat.
  • Cook chicken for 5-7 minutes, add pineapple, and stir in thickened teriyaki sauce.
  • Final Touch:
  • Sprinkle with sesame seeds and chopped green onions.
